The difference is that travelling on water one is actually dealing with the interphase of two liquids. In air, a vacuum, or even under the surface of water there is no limit to speed. On the surface, traditional boats are limited in their speed based on hull length- the longer the boat, the faster it can go. In order for it to go faster, it needs to ‘plane’ or submerge.

Most Australians can’t find Australia on a map… just sayin……
If one looks carefully at the immersed wing, one sees the leading edge cavitating in certain areas. A bit of extra polish will keep the flow laminar across the whole surface, but at the surface or the warer itself, the air rushes in the space that is formed just behind the leading edge. Not easily analysed that part, but wonderful to behold as a piece of engineering art!
